Today on National Buttermilk biscuit Day (May 14) people may be wondering what exactly is buttermilk? In days of yore the term buttermilk referred to the tangy residual liquid that remained in a butter churner after the cream had solidified into butter.
Tiny specks of creamy butter often flecked the liquid which had a slightly sour taste.
Nowadays buttermilk is cultured by adding live lactic acid bacteria generally Lactococcus lactis or Lactobacillus bulgaricus to low-fat milk.
and shares features with the fermented dairy drink kefir. Like kefir yogurt probiotics and other products containing live bacterial cultures buttermilk reportedly has numerous health benefits as proponents claim.
Though some people drink buttermilk straight cooks also often add it to recipes in place of milk sour cream or other dairy products.
Pancakes salad dressings soups breads and other baked goods including of course biscuits can be made with buttermilk. Because of its live cultures buttermilk also lasts longer than regular milk.
Though it won't contain any live bacterial cultures a tangy version of buttermilk can be made by adding a teaspoon of vinegar
or lemon juice to regular milk then letting the mixture sit for 10 minutes to curdle.
#Gluten-Free Diet Reduces Risk of Type 1 Diabetes in Mice Exposure to a gluten-free diet prenatally
Mouse mothers were fed either a gluten-free diet or a regular diet during pregnancy and the time when they were nursing.
When the mouse pups were four weeks old the researchers transitioned them to a regular diet.
About 50 percent of the mouse pups whose mothers were fed a regular diet developed type 1 diabetes
whose mothers were fed a gluten-free diet the study found. The researchers from the University of Copenhagen in Denmarkspeculated that the difference in diabetes risk may be related to gut bacteria.
The mothers and pups in the gluten-free group had increased levels of certain gut bacteria compared with those on the regular diet.
In general there are two groups of people who are recommended to avoid gluten: people with celiac disease who have an immune-system reaction to glutenand people who are gluten-sensitive who feel better after they cut gluten out of their diets said Cynthia Wu a clinical dietitian at the Ohio State university Wexner Medical center.
Gluten is a protein found in many grains including wheat barley and rye. People who don't fall into either of these groups would probably not be advised to cut gluten out of their diet in pregnancy
because it is a very difficult diet to follow Wu said. Gluten-free diets are known not to be risky in pregnancy
as long as women replace gluten-containing foods with healthy substitutes such as rice-based products and sweet potatoes Wu said.
Interestingly celiac disease is much more common in people with type 1 diabetes than in the general population:
About 10 percent of people with type 1 diabetes have celiac disease whereas 1 percent of the general population has celiac disease according to the American Diabetes Association.
The reason for the link is known not but both conditions are autoimmune diseases an dmay share similar genes as triggers Wu said.
To follow up on the mouse study a future study could look at information already collected from women who happened to followed a gluten-free diet in pregnancy
#Stress Eaters Beware: You May Burn Fewer Calories A double-patty cheeseburger and fries may be one of the worst things to eat after a stressful argument.
New research suggests that for a day after being stressed out people have slower metabolisms and burn fewer calories.
The findings suggest that regularly eating high-fat meals after being stressed could lead to additional weight gain the researchers said.
Each participant then ate a meal that included 930 calories and 60 grams of fat similar to meals of hamburgers and fries offered in popular fast-food restaurants.
Over the next seven hours the researchers measured participants'metabolic rates a number that shows how fast the body is burning calories and fat.
or more stressors during the past day burned on average 104 fewer calories than non-stressed women over the course of the day.
and not everybody would have a fast food meal every day. And some people even tend to eat less
in addition to stressors showed a higher peak in the levels of triglycerides after their meals. Triglycerides are a type of fat in the blood that the body uses for energy
These meal-related effects of depression and stress could help explain why depression is linked to heart problems the researchers said.
For the study the researchers chose a high-fat meal consisting of eggs turkey sausage and biscuits and gravy because previous studies have suggested people are more likely to eat high-fat comfort foods
when they are stressed the researchers said. To minimize the effects of stress on weight gain Kiecolt-Glaser suggests choosing vegetables fish and chicken over a hamburger and fries.
We know we can't always avoid stressors in our life said Martha Belury a professor of human nutrition at Ohio State
and a co-author of the study. But one thing we can do to prepare for that is to have healthy food choices in our refrigerators
and cabinets so that when those stressors come up we can reach for something healthy rather than going to a very convenient

Once the weed coils around its host plant it uses sharp appendages called haustoria to penetrate the host's tissue and suck out sugars and other nutrients.
along with these nutrients the weed also transports RNA the genetic material cells use to translate instructions in the organism's DNA into cellular machinery or proteins.

From vitamins to folate to potassium fruits and vegetables provide vital nutrients and help keep everyone healthy.
Yet so many children don't eat these crucial foods and their diets suffer from it. I'm sure there are plenty of parents who wish their children would eat broccoli just once instead of another round of french fries.
While this isn't a new problem it certainly is one that isn't getting a lot better.
With just a few steps you can get your children to add more color to their plate.
No I don't expect you to start eating every fruit and vegetable but if your child hears you say something like Mommy doesn't like broccoli
or she is going to start thinking it's OK to only eat certain types of foods.
Keep an open mind and try foods you don't normally eat in order to encourage your children to do the same.
and vegetables but it also can help families save a little bit of money on their grocery bills.
When deciding what to make for lunch or dinner it's important that you think about how to keep the plate looking interesting and colorful.
Think about how you feel when you eat. Besides taste and smell the visual component of your food is an important aspect of mealtime.
Try to see how many colors you can have on your plate. However this is not the time to force your child to finish all of the food on his or her plate.
Yes fruits and vegetables are healthy but if you force your child to eat everything on the plate you run the risk of setting your child up for bad behavior with food.
This could lead to problems with food later in life whether it is an eating disorder or obesity.
Mealtime should be a chance for your whole family to sit together and enjoy family time.
It's often not the best time for your child's attention span or for you to launch into a large nutrition debate.
If you're encountering struggles in getting your children to eat their greens you're not alone.
And don't worry most children are picky eaters; it's almost a rite of passage into adulthood.
Relax most children who go through an extremely picky eating stage will grow out of it.
Parents should know that eating these fruits and vegetables with your children will get them on the path to a healthy life.

but most B vitamins have a role in helping your body's cells to produce energy said Heather Mangieri a spokeswoman for the Academy of Nutrition and Dietetics and owner of Nutrition Checkup in Pittsburgh.
Seniors vegans and pregnant women are especially prone to Vitamin b12 deficiency. People may not realize Vitamin b12 is missing from their diets
because the liver can store a 5-year supply in reserve. A Vitamin b12 deficiency has a wide range of symptoms.
Someone with low Vitamin b12 may lose their appetite lose weight or feel tired and weak. Depression poor memory and trouble thinking can all be symptoms of a Vitamin b12 deficiency.

Supplement makers also say Vitamin b12 supplements can help treat conditions such as Lyme disease gum disease some skin infections liver disease and kidney disease.

Clams crab beef liver and many fish are particularly high in Vitamin b12. Eliminating meat dairy
and fortified cereals from your diet may require you to supplement vitamin B12 Sheth said.
In general Vitamin b12 is found in animal products Sheth said so strict vegetarians and vegans must actively seek out another source of the vitamin.
In people who are making the transition to a vegan diet a Vitamin b12 deficiency may not show up for a while Sheth said.
Nutritional yeast is the best vegetarian source of Vitamin b12 Sheth said. Just 2 teaspoons (6 grams) a day of nutritional yeast should cover an adult's Vitamin b12 needs.
Additionally most multivitamins contain the daily recommended amount of Vitamin b12 and fortified cereals typically provide ample Vitamin b12.
Other strict diets may unintentionally cut Vitamin b12. A lot of people have cut grains and a lot of B vitamins are fortified in our grain products Mangieri said.
If you're going to eliminate something from your diet investigate what you have eliminated and where else you can get those nutrients.
You have to really work with a registered dietitian or do your homework. The average adult should get 2. 4 micrograms of Vitamin b12 per day.
Women who are pregnant or breastfeeding need more about 2. 8 micrograms a day according to recommendations from the National institutes of health's Office of Dietary Supplements.
The body requires both stomach acid and a protein made in the stomach called intrinsic factor to digest Vitamin b12.
People with celiac disease or Crohn's disease may also have difficulty absorbing the Vitamin b12 from food or vitamin supplements.

#Why Does Less Meat Mean Less Heat?(Op-Ed) Josh Balk is food policy director at The Humane Society of the United states (HSUS.
He contributed this article to Live Science's Expert Voices: Op-Ed & Insights. After long focusing on fuel economy and energy production environmentalists and scientists are now promoting a diet of more plants and less meat to slow climate change but why?
It's a problem with efficiency. Industrial farm-animal production getting animals from farms to our plates is inherently inefficient.
According to the Food and agriculture organization of the united nations global animal agriculture produces vast amounts of crops to feed billions of farm animals long before they are consumed themselves.
The animals eat this food for months sometimes even years before being slaughtered they are the world's most under-recognized middle men.
Raising animals for food also includes feed-crop production which requires extensive water energy and chemical use as well as energy for transporting that feed live animals and animal products.
The total process for bringing such vast quantities of meat egg and dairy products to our plates comes at a substantial cost to the environment.
As a result of animal agriculture's impact on climate change organizations like the Natural resources Defense Council and the Sierra Club support eating more plant-based meals.
The power of making such a subtle change in our lives is remarkable. A Carnegie mellon University study found that eating plant-based meals even just one day a week reduces more greenhouse gases than eating exclusively local foods every day (a practice some people admirably
though mistakenly think leads to a major environmental impact due to the reduced travel miles to transport the food).
Americans are taking note: Figures from the U s. Department of agriculture and the National Agricultural Statistics Service show that our meat consumption is at its lowest level in years.
About a half-billion fewer animals are now being raised for food than just several years ago reducing animal agriculture's global impact.
This is the result of countless people choosing to reduce their meat consumption and participating in efforts like Meatless Monday becoming flexitarian or
what New york times columnist Mark Bittman calls Vegan Before 6. According to Gallup millions of Americans also have become vegetarian or vegan.
Dietary strategies have taken hold that further this impact such as the Three Rs endorsed by The HSUS:
while refining diets (switching to products from sources that adhere to higher animal-welfare standards).
Famed director James cameron became vegan and advocates meat reduction for conservation reasons. Nature Conservancy CEO Mark Tercek also is vegan
and has said on his blog: As an environmentalist I think our global consumption of meat is far too high.
And former George w bush and Sarah Palin speechwriter Matthew Scully is vegan writing in his book Dominion regarding farm animal production
I know a crime against nature when I see one. While there is certainly much public
With more than nine billion animals currently being raised for food in the United states each year if we all eschewed meat even one day a week
whether it s a Meatless Monday or any other day we'd spare more than one billion animals from the horrors of factory farms
With more people sharing our mutual responsibility to reduce carbon footprints by shifting to plant-based meals we have reason to be hopeful for our planet's future.
#Ancient People of Teotihuacan Drank Milky Alcohol, Pottery Suggests Ancient pottery confirms people made and drank a milky alcoholic concoction at one of the largest cities in prehistory Teotihuacan in Mexico researchers say.
This liquor may have helped provide the people of this ancient metropolis with essential nutrients during frequent shortfalls in staple foods scientists added.
In addition while maize is high in calories it contains only low concentrations of several vital nutrients such as iron calcium and B vitamins.
A number of these paintings may also depict scenes of people drinking a milky alcoholic potion known as pulque
Tequila is made also from agave plants but these liquors are made from the baked hearts of these crops not the sap.)
Prior studies hinted that pulque might have helped keep people in Teotihuacan alive. Maguey withstands frost
and drought better than maize and pulque could have provided vital calories most essential nutrients and probiotic bacteria.
To learn more about the diet and culture of the people of Teotihuacan scientists analyzed more than 300 sherds
or fragments of pottery from within and nearby the city that dated to between about A d. 200 and 550.
They focused on residues of the alcohol-making bacterium Zymomonas mobilis which gives pulque its punch.
This project pushed the detection limits of absorbed organic residue analysis said lead study author Marisol Correa-Ascencio an archaeological chemist at the University of Bristol in England.
The scientists discovered 14 sherds with the earliest direct chemical evidence for the making of pulque in Central america.

and pears and 53 percent drank fruit juice. Even more children ate vegetables more than 90 percent of children consumed some vegetables on a given day during the study period.
In the study foods such as french fries counted as vegetables because they contain potatoes said study researcher Samara Joy Nielsen a nutritional epidemiologist at the Centers for Disease Control and Prevention.
Eating Habits The researchers looked only at whether children consumed any fruit or any vegetables in a 24-hour period and so the study cannot determine how much of these foods children are eating.
The U s. federal dietary guidelines recommend that people consume at least 1 cup of fruit and 1 cup of vegetables per day and often more depending on age sex and amount of physical activity.
and vegetables kids are said eating she. Other recent studies suggest that although kids eat some fruit
and vegetables daily they may not be eating that much. A 2013 national survey of U s. high school students found that 61 percent of students ate vegetables at least once daily but just 16 percent ate vegetables three or more times per day.
It s the bitter taste that started all of this supertaster stuff. In 1931 American chemist Arthur Fox accidentally released a cloud of phenylthiocarbamide (PTC) powder into his laboratory.
His colleague complained that it tasted intensely bitter while Fox tasted nothing. They tasted it again with the same result.
He found that some found it intensely bitter some mildly bitter and others could not taste anything.
During these experiments Bartoshuk noticed that these supertasters had a more dense covering of structures that contain taste buds (known as fungiform papillae) on their tongue.
Salt appears to be a bit of a different beast it seems that supertasters actually consume more salt possibly
if you are a supertaster based on the foods that you like. If you find coffee too bitter for your tastes you may be a supertaster.
because you have a healthier diet. This is because you avoid sugar and fat (although this all depends on
what you consider a healthy diet to be there seems to be a new story every week).
But being a supertaster might also put you off healthy bitter foods such as broccoli Brussels sprouts or asparagus.
While bitterness is important for some foods (such as chocolate) we generally reject bitter foods because poisonous things are usually bitter.
At least one study suggests that supertasters do indeed eat fewer bitter vegetables. Fortunately for asparagus farmers scientists have developed bitter blockers#.
Given the number of different types of receptors involved the chances of having dinner with someone with the same set of receptors as you are quite low.
Rotundone is the main chemical responsible for the smell of pepper (called a character impact odorant.
because it s also present in many wines made from the grape Shiraz (or Syrah).
These wines are noted often for their spicy or peppery characteristics. So when wine experts describe a Shiraz as peppery they re not making it up it contains the same chemical as pepper.
So are some people more sensitive to smell? Sure just as some are more sensitive to taste to light (such as Bono who claims to have sensitive eyes) and to other stimuli.
and smell are essentially little chemistry labs that conduct loads of experiments to determine which chemicals are present in food drinks and air.
So next time you re having an argument with someone over dinner about whether the meal is any good keep in mind that their experience is probably very different to yours.
